Marinate and freeze your flank steaks
My friend Susan sent me a link the other day about how to make cheap steaks taste good. And it got me to thinking about my favourite flank steak in a Korean marinade.
The marinade is simple. For each pound of flank steak, add the following marinade:
1/4 cup soy sauce
1/4 cup granulated or brown sugar
2 tsp sesame oil
2 tbsp lemon juice
4 cloves garlic chopped or crushed
1/4 tsp ground pepper
I usually buy a few 1-2 pound flank steaks and place each one in its own large freezer bag. I add the marinade, squeeze out the air and seal it tight. Then, pop it in the freezer. The day you want to eat it, take it out and leave it on the counter. As it defrosts, it marinates to perfection. BBQ to perfection (I like it medium rare, but medium is nice too).
Flank steak can be served as the center of a formal, sit-down dinner or on a buffet as part of a summer BBQ. It’s easy on the pocket book and will bring a smile to your face when you bite into it.
